Easy Slice Salad

A quick alternative to a leafy green salad to round out the meal.

Ingredients:
1 ripe tomato, sliced2 Kirby cucumbers, peeled and sliced1/4 red onion, sliced into thin half moons1/3 cup Balsamic Vinegar2 teaspoons extra virgin olive oil2 teaspoons Dijon-style mustard1/4 teaspoon salt1/4 teaspoon dried oregano1/8 teaspoon black pepper

| Instructions: |
| Place all vegetables in a serving bowl.
Mix the dressing ingredients together and drizzle over salad.
Serve immediately. This salad can be refrigerated for up to 2 hours before serving. |
